1 | pound | brussels sprouts, trimmed and halved | |

5 | strips | thick-cut bacon | |

2 | tablespoons | olive oil | |

salt and pepper, to taste | |||

1/2 | cup | walnuts, toasted and chopped | |

Preheat oven to 400 degrees F.
Arrange bacon in a cast-iron pan and bake until crispy (about 12-15 mins). Transfer bacon to a plate lined with paper towels. Reserve 2 T. of bacon drippings and eat your snack slice of bacon (we know it smelled good and the recipe only needs 4 strips - you're welcome). Chop bacon once cooled.
Heat bacon drippings and oil in a cast-iron pan over medium-high heat. Place sprouts cut side down in the pan, season to taste and place in the oven. Roast, giving the pan a good shake now and then, until golden brown (about 10-20 mins).
Transfer sprouts to a serving dish, toss with a healthy handful of SarVecchio® Parmesan, walnuts and bacon.
