In large bowl, combine stuffing, turkey and cheese. Transfer to lightly greased 13 x 9-inch baking dish.
Whisk together eggs, half-and-half, parsley, salt, if desired, pepper and nutmeg until blended. Pour egg mixture over stuffing mixture. Press bread to soak. Cover and refrigerate 1 hour or up to 4 hours.
Heat oven to 350 degrees F. Bake 45 minutes or until center reaches 165 degrees F.
