Combine 2 tbsps Cajun seasoning, egg, yellow mustard and hot sauce together and place in a gallon size sealable food safe bag with the shrimp. Seal and gently shake bag until the shrimp are covered in marinade; marinate for at least 1 hour.
Mix together 1 tbsp Cajun seasoning and flour in a small bowl. One by one remove shrimp from bag, dip into Cajun seasoned flour and place on a plate. Let sit for 10-15 minutes for extra crispy results.
Fry shrimp submerged in vegetable oil at 300 degrees F for roughly 10 minutes until crispy.
Split and toast Kings Hawaiian Slider Rolls.
Spread seasoned mayo on both sides of rolls. Add one jumbo fried shrimp, sliced tomato, shredded lettuce and the top bun.
