Quick and Spicy Pork Chili

Ingredients

| 1 | medium onion, coarsely chopped | ||

|
|||
| 1 | clove | garlic, minced | |
|
|
|||
| 1 | can | (14-1/2-oz.) diced tomatoes, Mexican-flavored | |
|
|
|||
| 1 | can | (16 oz.) kidney beans, drained | |
|
|
|||
| 1 | can | (8 oz.) tomato sauce | |
|
|
|||
| 1 | can | (8 oz.) kernel corn, drained | |
|
|
|||
| 2 | tablespoons | chili powder | |
|
|
|||
| 1 | tablespoon | ground cumin | |
|
|
|||
| 1 | teaspoon | salt | |
|
|
|||
| 1/2 | teaspoon | black pepper | |
|
|
|||
Directions:
In large saucepan, cook and stir pork with onion and garlic until pork is cooked, about 6 minutes. Stir in remaining ingredients, bring to a boil, cover and simmer for 15 minutes, until flavors are blended and chili is hot. Serve with shredded Cheddar cheese and warmed flour tortillas, if desired.
