Orange and Honey Mustard Roasted Vegetables
Yield: 6 servings
Ingredients
| 1 | small green bell pepper, cut in strips | ||

| 1 | small red bell pepper, cut in strips | ||
|
|
|||
| 1 | small red onion, cut in strips | ||
|
|
|||
| 1 | small zucchini, cut in 1/2 inch chunks | ||
|
|
|||
| 1 | cup | baby carrots | |
|
|
|||
| 2 | Tablespoons | olive oil | |
|
|
|||
| 4 | cloves | garlic, sliced in half | |
|
|
|||
| 1/4 | cup | honey mustard | |
|
|
|||
| 2 | Tablespoons | orange juice | |
|
|
|||
| 1 | teaspoon | grated orange peel | |
|
|
|||
| 3 | cups | cooked pasta (prepared according to package directions) | |
|
|
|||
Directions:
Preheat oven to 450 degrees F
Toss vegetables with oil and garlic in roasting pan. Bake for 20 minutes or until tender.
In the meantime, stir together honey mustard, orange juice and orange peel; toss with vegetables just before serving. Serve over hot cooked pasta.
