3 | Fuju persimmons, peeled and chopped into 1/2- inch pieces, discard seeds | ||

3/4 | cup | pomegranate arils | |
|
|||
1 | Granny Smith or Fuji apple, peeled, cored and chopped into 1/4- inch pieces | ||
|
|||
8 | fresh mint leaves, thinly sliced | ||
|
|||
2 | teaspoons | lemon juice | |
|
|||
1 | teaspoon | honey | |
|
Gently toss all of the ingredients together.
Keeps for a couple of days in the refrigerator, but is best eaten the day it is made.
