Mango Tequila Sauce: | |||
1/4 | cup | chopped sweet yellow onions | |

1/2 | Tablespoon | olive oil | |
|
|||
1/3 | cup | chopped yellow bell pepper | |
|
|||
1 | Tablespoon | granulated sugar | |
|
|||
1/2 | jar | (1 pound, 8 ounces) mango packed in extra light syrup, drained | |
|
|||
1 | Tablespoon | tequila | |
|
|||
1 | Tablespoon | key lime juice, divided | |
|
|||
Garnish: | |||
1 | large jalapeno, seeded and finely minced | ||
|
|||
1 | Tablespoon | fresh cilantro, minced | |
|
|||
Salt to taste | |||
|
|||
1 | Smithfield Prime Pork Loin Filet, cut into 1- inch thick slices | ||

Mango Tequila Sauce:
Saute onions in hot olive oil over medium heat until tender and slightly browned on the edges.
Add bell pepper and saute until heated through. Stir in sugar until dissolved; remove from heat.
Combine mangoes, tequila, 1/2 tablespoon lime juice, and onion mixture in blender. Puree in blender until smooth.
Garnish:
Combine minced jalapeno, cilantro and remaining 1/2 tablespoon key lime juice in small bowl; salt to taste. Let stand until ready to serve.
Pork Filets:
Heat charcoal or gas grill to medium-high.
Grill pork filets 13 to 18 minutes, turning every 5 minutes, until internal temperature reaches 150 degrees F
To serve, spoon Mango Tequila Sauce onto 4 plates; top each with 2 grilled filets. Garnish with minced jalapeno mixture.
