2 | packages | (9 ounce each) refrigerated cheese tortellini | |

60 | slices | Sugardale Pepperoni, cut in half | |
|
|||
2 | cups | spinach, packed and roughly chopped | |
|
|||
1 | container | (8 ounce) fresh mozzarella pearls, drained | |
|
|||
1 | cup | cherry tomatoes, cut in half | |
|
|||
1 | can | (2.25 ounce) sliced black olives, drained | |
|
|||
1 | jar | (6 ounce) marinated artichoke hearts, drained and chopped | |
|
|||
1/4 | cup | prepared basil pesto | |
|
|||
2/3 | cup | Italian salad dressing | |
|
Boil tortellini according to package instructions. Drain and rinse under cold water. Set aside and allow to cool completely.
In a large bowl, toss together cooked tortellini, Sugardale pepperoni, chopped spinach, mozzarella pearls, cherry tomatoes, olives and artichoke hearts. Mix well. Cover and chill if not serving immediately.
In a small bowl, stir together basil pesto and Italian dressing. Pour dressing over salad and toss to coat immediately before serving.
