Preheat oven to 200 degrees F. Place whole wheat flour, flour, baking powder, baking soda, cinnamon and salt in a large bowl and combine with a wire whisk. Combine milk, eggs, butter, honey and vanilla in a medium bowl; whisk into dry ingredients just until blended, a few small lumps may be left. Fold in mashed banana and walnuts, if desired.
Heat an electric griddle to 325 degrees F or a stove top griddle or pan over medium heat; coat with Full Circle Canola Oil Non-Stick Cooking Spray. Drop batter onto griddle using a 1/4 cup measure. Cook until bubbles begin to form and top surface starts to appear dry, about 1-1/2 to 2 minutes. Turn pancakes; continue cooking until golden, about 1 minute. Place cooked pancakes on a baking sheet and keep warm in oven until all are cooked. Serve pancakes with whipped cream, caramel sauce, additional banana slices and walnuts.
