1 | pound | ground beef | |

1/2 | teaspoon | salt | |
|

1/4 | teaspoon | pepper | |

1/4 | cup | tomato sauce | |
|
|||
2 | cups | cauliflower rice | |
|
|||
1/2 | cup | shredded mozzarella or cheddar cheese | |
|
Preheat oven to 375 degrees F.
Wash peppers, cut off the tops and remove the seeds. Season peppers on the inside with salt and pepper.
Cook onion and garlic in olive oil for 2 minutes. Add ground beef, salt and pepper and cook for 5 minutes, until the meat is browned. Add tomato sauce and cauliflower rice. Cook for 2 minutes, stirring frequently.
Divide stuffing between the 4 peppers. Place peppers in a baking dish and cover with foil. Bake for 25 minutes. Uncover and bake for an additional 5-10 minutes, until the peppers are soft and fully cooked.
Sprinkle cheese on the tops of the peppers for the last 2 minutes of baking.
