1 | cup | yellow onion, diced | |

1 | pound | boneless skinless chicken breast, chopped | |
|
|||
1 | cup | roasted red bell peppers | |
|
|||
2 | tablespoons | dried basil | |
|
|||
1 | tablespoon | dried thyme | |
|
|||
2 | tablespoons | minced garlic | |
|
|||
1 | can | (15 ounce) tomato sauce | |
|
|||
1 | container | (10 ounce) Sabra Classic Hummus | |
|
|||
salt and pepper to taste | |||

Optional garnishes: | |||
Urfa biber (Turkish black pepper) | |||

Place olive oil in a medium sized pan. Heat over medium high heat. Add onion and cook until almost translucent, about 4 to 5 minutes.
Add chicken breast, roasted peppers, basil, thyme, garlic and tomato sauce. Stir until ingredients are completely coated with sauce. Simmer 10 to 15 minutes or until sauce is hot and chicken is cooked through (165 F internal temperature).
Spoon one quarter of Sabra Classic Hummus onto each serving bowl. Swirl the hummus, using the back of the spoon, to create a "bowl" of hummus inside the serving bowl.
Ladle chicken and roasted pepper mixture into the hummus bowl Serve warm.
Top with option garnishes, as desired.
