1 | can | (16 ounce) chickpeas, drained | |

1 | tablespoon | olive oil | |

salt and pepper to taste | |||

1/4 | cup | cooked farro | |
|
|||
1 | cup | fresh spinach | |
|
|||
1/2 | cup | fresh basil, coarsely chopped | |
|
|||
2 | tablespoons | balsamic vinegar, divided | |
|
|||
1/2 | cup | Sabra Classic Hummus | |
|
|||
1/4 | cup | thinly sliced cucumber | |
|
|||
1/4 | cup | heirloom tomato wedges | |
|
|||
1 | tablespoon | chopped flat leaf parsley | |
|
Preheat oven to 350 degrees F.
Toss chickpeas, olive oil and salt and pepper together in a medium bowl. Spread onto a baking sheet and bake for 12 to 15 minutes until golden brown. Remove from oven and set aside.
Prepare Farro following package directions; set aside.
Place spinach and basil into a serving bowl and dress with 1 tablespoon balsamic vinegar.
Scoop 1/2 cup Sabra Classic Hummus and place into the center of the bowl over the spinach.
Arrange 1/2 cup roasted chickpeas, farro, cucumber and tomato in the bowl surrounding the hummus.
Drizzle the remaining balsamic vinegar over the hummus and vegetables.
Garnish with freshly chopped parsley.
