This baked mac and cheese combines spicy pepper jack, cheddar and cream cheese with ground beef and fresh vegetables to give you all the flavor of your favorite taco in a bowl.

1 | can | (14.5 ounce) diced tomatoes, undrained | |

1 | can | (16 ounce) kidney beans, rinsed and drained | |

1 | can | (8 ounce) tomato sauce | |

1 | can | (4 ounce) chopped green chiles, undrained | |

1/2 | teaspoon | salt | |

1/4 | teaspoon | coarsely ground pepper | |

1 | package | (8 ounce) Tops cream cheese - Wisconsin Made, cut into small cubes | |
|

8 | ounces | Tops cheddar cheese - Wisconsin Made, shredded and divided (2 cups) | |

8 | ounces | Tops pepper jack cheese - Wisconsin Made, shredded and divided (2 cups) | |

Heat oven to 350 degrees F.
Cook pasta according to package directions until al dente; drain.
Meanwhile, brown beef with onion in a Dutch oven over medium heat until meat is no longer pink; drain. Stir in garlic and taco seasoning. Add the corn, tomatoes, beans, tomato sauce, green chilies, salt and pepper. Bring to boil, stirring occasionally.
Reduce heat to low; simmer, uncovered, for 5 minutes. Stir in cream cheese until melted. Gradually, stir in 1 cup cheddar and 1 cup pepper jack until melted. Stir in pasta. Remove from the heat.
Spoon pasta mixture into a greased 13 x 9-inch baking dish. Sprinkle with remaining cheddar and pepper jack. Bake for 20-25 minutes or until golden brown and cheeses are melted. Let stand for 5 minutes. Garnish servings with sour cream and green onions.
Make-ahead tip:
The dish can be prepared up to a day in advance, and then baked. Cool casserole; cover and refrigerate. Let stand on counter for 40 minutes before baking. Bake dish as directed, adding 5-10 minutes, or until temperature near the center reaches 165 degrees F.
