To make two grilled cheese sandwiches, spread Cabot Unsalted Butter over one side of each of the 4 slices of bread. Then turn each of the bread slices over.
Place the layers of Sharp Cheddar on 2 slices of bread. Follow with the artichoke hearts, fresh herbs, and Colby Jack Cheese as the third layer.
Cover each sandwich with the other 2 slices of bread and press on the sandwich with a bit of pressure.
Preheat grill pan on medium heat. Brush the bread with melted Cabot Salted Butter and place sandwiches on the grill pan.
Cover with the lid and cook on each side for 3-5 minutes, until cheese is melted. Enjoy!
