1 | teaspoon | vanilla extract | |

1 | cup | granola | |
|

1 | cup | mandarin segments | |

1 | cup | Greek yogurt, low fat | |

In a medium bowl whisk together chia seeds, almond milk, honey and vanilla extract until just combined. Cover the bowl and place in the refrigerator overnight or at least a couple of hours. Stir mixture before serving into the parfaits.
Evenly distribute a layer of granola, mandarin segments, chia pudding and greek yogurt into three separate glasses or mason jars. Top the top layer with more mandarins and a drizzle of honey if desired.
