1/4 | cup | julienned sun dried tomatoes packed in oil | |

1 | jar | marinara sauce | |

4 | cups | vegetable broth | |

1/4 | cup | plant based cream cheese | |

Preheat the oven to 400 degrees.
Prep the vegetables. Chop the broccoli into small florets, quarter the small cremini mushrooms and cut the larger ones into eighths. Slice the Beyond Meat Spicy Italian Sausages at a bias.
Spread the rigatoni onto the bottom of a 9x13 inch baking dish. Top with the broccoli, mushrooms, Beyond Meat Spicy Italian Sausage, sun dried tomatoes, pasta sauce, and vegetable broth. Stir to combine and press down any of the noodles making sure they are completely covered by liquid. Top with the plant based cream cheese then tightly cover with aluminum foil.
Bake for 40 minutes. Remove the foil and bake uncovered for an additional 15 minutes.
Stir the pasta until the plant based cream cheese is incorporated and a creamy sauce texture is obtained. Season with salt and pepper and garnish with fresh basil.
