1/4 | cup | firmly packed light brown sugar | |

1/4 | cup | chopped cashew halves | |

1 | can | (18 oz.) vacuum-packed sweet potatoes | |

1 | cup | milk | |

3 | eggs | ||

1 | teaspoon | ground cinnamon | |
|
|||
1/2 | teaspoon | salt | |
|
|||
1/4 | teaspoon | ground allspice | |
|
Combine brown sugar and margarine; spoon into bottom of a well-greased 1-quart ring mold. Arrange cashew halves in sugar mixture in mold.
In electric blender or food processor combine sweet potatoes, milk, eggs, cinnamon, salt and allspice. Blend until smooth and creamy.
Spoon into prepared ring mold. Place ring mold in pan of hot water and bake at 325 F. for 1 hour and 10 minutes, or until knife inserted in center comes out clean. Loosen edges with knife; invert onto serving plate and serve immediately.
