Blue Cheese Butter: | |||
1/4 | cup | butter, softened | |
|

2 | Tablespoons | blue cheese, softened | |

Grill: | |||
1 | Smithfield Marinated Pork Tenderloin | ||

1 | Tablespoon | olive oil | |
|
|||
To assemble: | |||
10 | small soft dinner rolls | ||

10 | decorative skewers | ||

10 | blackberries | ||

Sauce:
In a medium sauce pan place berries, sugar, vinegar and water. Cook over low heat stirring often and mashing with the back of your spoon until sugar dissolves and berries break down. Remove from heat and allow to cool.
Blue Cheese Butter:
In a small bowl, mix together butter and blue cheese.
Grill:
Brush tenderloin with olive oil. On a medium-high setting, cook 25 minutes per pound, covered, or until meat thermometer registers 145 degrees F internal meat temperature. (Uncovered grill will require longer cooking time.)
Remove from grill and allow to rest for 3 minutes. Slice into 1/4- slices. Will yield 20 slices.
To assemble sliders:
Spread one side of each roll with the blue cheese butter. Top with 2 slices of tenderloin and a spoonful of berry sauce. Secure with a decorative skewer and a berry. Wrap in parchment and pack for the game!
