Yield: 8 servings
8 | strips | thick cut bacon, cut into bite size pieces | |

8 | hot dogs | ||

8 | hot dog buns, split | ||

2 | ounces | smoked gouda cheese, cut into small pieces | |

Fry bacon in pan to desired crispness. Please bacon on paper towels and blot to remove excess grease.
Grill hot dogs over medium heat for 10 minutes. As hot dogs cook, place split buns face down over grill grate to warm (this happens quickly).
Remove hot dogs from grill and cut a slit down the center of each hot dog. Place dogs in the buns and stuff hot dog with smoked Gouda cheese.
Liberally cover each hot dog with chopped bacon.
