1 | small cucumber, cut in half lengthwise, then thinly sliced | ||

1 | bag | (8 ounces) Tops Shredded Mozzarella cheese | |

2 | bags | Fresh Express Salad Blends (totaling 12 ounces) | |

Preheat grill on medium.
Brush peach wedges with 1 tablespoon olive oil or spray with nonstick cooking spray, then cut into wedges. Brush peaches with 1 tablespoon oil, then grill directly over heat 2 to 4 minutes or until tender and grill marks are visible. Remove from grill and set aside.
In a small bowl whisk lemon zest, lemon juice, honey, shallots, Dijon mustard, pepper and salt. Add remaining 1/4 cup olive oil and whisk until dressing is mixed together.
Divide salad blend onto 6 plates and top with cucumbers, grilled peach wedges, shredded mozzarella and pistachios. Drizzle with dressing and serve with additional dressing on the side.
