2 | ounces | Wisconsin gouda cheese, shredded (1/2 cup) | |

1/4 | cup | walnuts, chopped | |
|
Combine sugar and cinnamon; set aside. Warm butter in a medium, nonstick skillet over medium-low heat, tilting pan to coat the bottom. Place one tortilla into pan. Layer with 1/4 cup gouda, apple slices, walnuts and reserved cinnamon-sugar mixture. Top with the remaining gouda and tortilla. Cook for 2-3 minutes on each side or until cheese is melted.
Transfer to cutting board. Cut into wedges.
Cheesemonger Tip:
Young gouda cheese has a sweet curd that's smooth, creamy and buttery. When gouda is aged the cheese flavor becomes more complex with caramel notes, and it has a slight crystalline texture.
