Spice up the harvest season with warm apple chutney on top of creamy, buttery gouda cheese and crackers. They're a tasty treat on a crisp fall day.

1/2 | cup | finely chopped red onion | |

1/4 | cup | apple cider vinegar | |

3 to 4 | tablespoons | brown sugar | |
|
|||
1/2 | teaspoon | ground allspice | |
|
|||
1/2 | teaspoon | grated fresh ginger | |
|
|||
1/4 | teaspoon | ground cinnamon | |
|
|||
1/8 | teaspoon | crushed red pepper flakes | |
|
|||
8 | ounces | Marieke Gouda Plain Young cheese | |
|
|||
24 | assorted crackers | ||
|

6 | fresh thyme sprigs, leaves removed, optional | ||

Bring the apples, red onion, cider vinegar, brown sugar, allspice, ginger, cinnamon and red pepper flakes to a boil in a saucepan over medium-high heat, stirring constantly.
Reduce heat to low; simmer, covered, for 40 minutes, stirring occasionally. Uncover; increase heat to medium. Cook and stir apple mixture until liquid is evaporated. Cool completely.
Cut gouda into 24 slices. Place a gouda slice on each cracker; top with chutney. Garnish with thyme leaves if desired.
Recipe Tips:
We ranged the brown sugar to suit tastes. Try the bottom of the range if you like your chutney a little sweet and tangy.
Cheesemonger Tip:
Young gouda cheese has a sweet curd that's buttery, creamy with a nutty finish. Aged gouda flavors are more complex with caramel notes and butterscotch sweetness; and it has a slight crystalline texture.
