Preheat oven to 375 degrees F. Line 2 rimmed baking sheets with parchment paper. Remove bacon slices from package and space evenly without overlapping.
Place pans in oven and bake for 15 minutes. Rotate pans halfway through baking time. Remove from oven. Carefully drain grease from pans.
For Maple Brown Sugar Bacon:
Heat brown sugar and maple syrup in microwave in small microwave-safe bowl for 30 seconds. Whisk and continue to heat in 10-second increments until smooth. Brush mixture over 1/3 of the bacon.
For Honey Sriracha Bacon:
Whisk honey, sriracha and soy sauce in small bowl until combined. Brush mixture over 1/3 of the bacon.
For Pepper Dijon Bacon:
Whisk mustard, maple syrup, and black pepper in small bowl until combined. Brush mixture over 1/3 of the bacon.
Return bacon to oven for an additional 3 to 5 minutes, until toppings have caramelized. Remove from oven, let cool slightly and arrange on serving board or platter with eggs and toast.
Garnish Honey Sriracha Bacon with sesame seeds.
