Grated zest of 1 lime | |||

1 | Tablespoon | fresh lime juice | |
|
|||
2 1/2 | teaspoons | granulated sugar | |
|
|||
2 | teaspoons | grated fresh ginger | |
|
|||
1 | Tablespoon | toasted sesame oil | |
|
|||
1/4 | teaspoon | Asian chile sauce | |
|
|||
Pinch sea salt | |||

|||
Baby Spinach Salad: | |||
1 | package | (5 ounce) Earthbound Farm Organic Baby Spinach | |
|
|||
1 | package | (12 ounce) Earthbound Farm Organic Petite Mini Peeled Carrots | |
|
|||
1/2 | cup | Earthbound Farm Organic Mango, julienned | |
|
|||
1/2 | cup | julienned papaya | |
|
|||
1/3 | cup | julienned jicama | |
|
|||
1/4 | cup | roasted, salted sunflower seeds | |
|
|||
2 | Tablespoons | shredded sweet coconut | |
|
Dressing:
Combine cococnut milk, lime zest, lime juice, sugar, ginger, sesame oil, chile sauce and salt in a jar and shake vigorously to combine.
Salad:
Place the spinach and carrot in a large bowl. Add two-thirds of the dressing and toss.
Divide the dressed mixture between 4 plates and garnish each serving with some of the mango, papaya, jicama, sunflower seeds and coconut.
Drizzle the remaining dressing atop each salad and serve immediately.
