1/4 | cup | heavy whipping cream | |

1/4 | cup | cherry jam or jam of choice | |

Combine the flour, salt and pepper in a large bowl. Cut in butter until crumbly. Fold in blue cheese. Whisk egg and cream in a separate bowl. Add to flour mixture; gently fold in until just combined.
Transfer dough to plastic wrap; shape with wrap into a disk. Wrap in plastic wrap. Refrigerate for at least 4 hours or until firm.
Heat oven to 350 degrees F. Roll out dough on a lightly-floured surface to 1/4-inch thick. Cut with a floured 2-inch round cookie cutter. Place 1 inch apart on parchment-lined baking sheets. Press an indentation in center of each with your thumb.
Bake for 18-20 minutes or until edges are golden brown. Remove from pan to a wire rack. Fill each with 1/2 teaspoon jam. Cool completely.

Have a wedge of blue cheese? It's easy to make crumbles. Place the wedge into the freezer for about 30 minutes; then crumble with a knife. For best results, keep the cheese cold for easier handling.
