We call this one kid-friendly, but it's really a people friendly recipe. And it's quick, easy, and downright delicious.
Yield: Makes 2 quesadillas (8 triangles)
1 | can | Bumble Bee Chunk Light Tuna | |

1-2 | cups | Mexican blend cheese | |
|
|||
1/8 | teaspoon | onion powder | |
|
|||
Optional: salt and pepper | |||
|
|||
2 | teaspoons | butter or cooking oil | |
|
|||
2 | flour tortillas | ||
|
|||
1 | cup | guacamole | |
|
|||
1 | cup | grape tomatoes, halved | |
|
Drain Bumble Bee Tuna well and mix together in a bowl with cheese and onion powder.
Option to season with salt and pepper.
Over medium-low heat, grease large pan with 1 teaspoon butter or oil and place tortilla in flat.
Cover 1/2 tortilla with 1/2 tuna mixture then fold the tortilla in half. Cook for 2-3 minutes until cheese is melty.
Flip quesadilla and cook another 2 minutes.
Remove quesadilla from heat and repeat with other tortilla and remaining tuna mixture.
Cut each quesadilla into 4 triangles.
Place 2 or 4 triangles of quesadilla into each lunch box along with 1/4 cup guacamole and 1/4 cup tomatoes.
