1 | Tablespoon | butter or margarine | |

2 | cups | sliced fresh mushrooms | |
|
|||
1/3 | cup | chopped onion | |
|
|||
2 | Tablespoons | all purpose flour | |
|
|||
1/4 | teaspoon | salt | |
|
|||
Ground black pepper to taste | |||
|
|||
3/4 | cup | beef broth | |
|
|||
1 | cup | sour cream | |
|
|||
1 | Tablespoon | freshly chopped parsley | |

6 | English muffins, split, toasted and buttered | ||

Melt butter in large skillet over medium heat. Add mushrooms and onion; cook, stirring occasionally 4 minutes. Stir in flour, salt and pepper; cook, stirring constantly for 1 minute.
Add broth, bring to a boil stirring constantly. Cook and stir 1 minute; add kielbasa and return to a boil. Cook for 6 to 7 minutes over medium heat or until heated through, stirring occasionally.
Reduce heat to low; stir in sour cream and parsley. Heat 5 minutes, stirring occasionally. Serve on toasted English muffins. Sprinkle with chives if desired.
Cook's Tip:
Turn this recipe into a dinner entree by serving over hot buttered egg noodles in place of the English muffins.
